The ham knife, back on a magnificent collaboration between Bigorre and Nontron.

The cutting of ham is not exclusively reserved for Spain, home of the famous pata negra and jabugo. The Hexagon is full of pigs of different races spread over well defined territories. The black pig of Bigorre is one of them. This micro-region extends from the plain of Tarbes to the circus of Gavarnie, on the Pyrenean border with Spain. Bigorre is home to a breed of pigs that almost disappeared when it was thirty years ago, a handful of farmers who are concerned with quality and tradition have taken up the challenge.

Efforts amply rewarded since the AOC Black ham of Bigorre and the AOC Pork Black of Bigorre were the subject of a decree of homologation of the Ministry of the Agricuture on December 26, 2015. The starting point of the future recognition in AOP by the European Union.

The Nontronnaise cutlery is also heir to a multicentenary know-how. It was almost natural for our Nontron knife factory to imagine a magnificent ham knife, the result of a unique encounter between the know-how of the Padouen collective of Noir de Bigorre and those of non-cutlery cutlery.

The bias of this association of breeders is to perpetuate the breeding of the black pork of Bigorre by scrupulously respecting the artisanal methods and the know-how of our old ones. Tested by the breeders and craftsmen of the Padouen collective, this ham knife, ebony ball handle, satin finish, delivered with a gift box (recyclable cardboard) is made by cutlery craftsmen of the alteliers of the Coutellerie Nontronnaise, an institution created in 1928. The Nontron is the oldest knife in France.
